No Egg Microwave Chocolate Cake

I've been tried to make microwave cake a lot when I feel to eat one. But most of the time, I just go with my gut and opt-out of the measuring thing. Of course, nearly 98% came out the either dense or chewy texture. 

Then one day, I saw a Youtube video and I follow the recipe. To be honest, it came out good but the texture is just not what I prefer, it like kinda too moist for me. So by using the recipe given, I try to change the recipe a little by little, and finally, I come out with a recipe where it meets my desire preference. It is a Chocolate cake but tries not to do much change because I have tried to change the liquid to either banana or yogurt but it didn't come out with a cakey texture but rather a chewy texture. Of course, if you want to experiment go for it. It will be better to test out and experiment with yourself to meet your desired preference(like me). Below is the recipe with no egg microwave chocolate cake.


Ingredients:
Square Glassware 11.5cmX11.5cmX5.5cm 
Parchment paper
7tbsp/50g all-purpose flour
3tbsp/13g of cocoa powder
4tbsp granulated sugar
1/2tsp baking powder
1/4tsp salt
4tbsp vegetable oil
1/2tsp vanilla extract
8tbsp milk
1/2tsp instant coffee powder (optional)
1tsp hot water (optional)

Steps:

1.Mix thoroughly with a whisk all the dry ingredients in a bowl (prevent lumps).

2.Make a dent in the center, pour in the liquid ingredients, and mix until it becomes a smooth batter.

3.Pour the batter into a microwavable container with parchment paper in it.
4.Microwave the cake batter in 800w for 2 1/2mins (depend on your microwave, it can be 2 1/2min or longer). 

5.Insert a toothpick, if clean comes out, means it is done.
6. Be sure to take the cake out immediately from the container to release steam that can form water droplets and get the cake soggy. 

The portion of the recipe is relatively big because I'm using this recipe for my lunchbox cake. If you are using a mug, just divided the recipe into half. Then you can enjoy chocolate cake in a mug. 
The cake is rich and moist, although it is not the very perfect chocolate cake, but as a microwave cake is still a decent chocolate cake to eat and to relieve the desire to munch on chocolate cake (me).
